Details
Guttiau bread, or pane guttiau, is a version of the classic Sardinian carasau bread seasoned with olive oil and salt. Locals have nicknamed it sheet music (“carta da musica”) because of its thin, almost paper-like look.
The breads were originally made as long-lasting provisions for shepherds. The name carasau (“toasted”) comes from how it's made: the breads were baked twice so they would stay crisp for a long time. Today they are mostly enjoyed with an aperitivo, on their own or with spreads, cheeses and cured meats.
