Pastificio Artigiano Fabbri, one of Tuscany's most respected pasta makers, takes pride in producing pasta of unique quality and flavor. By following traditional methods and honoring craftsmanship, the pasta is also healthier than industrially made pasta.

Behind the excellent flavor, besides top-quality organic ingredients, are very low temperatures and a careful drying stage that lasts 3–6 days. Copper dies make the pasta porous, so its flavor and ability to hold sauce are considerably (30%) better than those of so-called industrial pasta.

Pasta Fabbri has been making pasta since 1893, for five generations now. The pasta factory still stands in the same place, on Piazza Emilio Landi in the town of Strada in Chianti.

If you visit the Chianti area, it's worth setting aside time to explore the history of pasta making at Pasta Fabbri's own museum. There you can experience a true Italian artisan tradition.
