The grain makes the difference

Sicilian Mulino Angelica makes first-class pasta and flour for every purpose from the finest ancient grains. The unique method perfected by miller Giuseppe Angelica combines the Angelica family's traditional craftsmanship with modern technology.

At the heart of the mill are three French natural millstones from La Ferté, quarried at La Ferté-sous-Jouarre. They grind the whole grain into flour rich in fibre, minerals, vitamins, protein and fats. The grains are milled with their germ and bran, which blend evenly into the flour for excellent flavour and nutritional value.

The flour then goes through modern calibration and sifting to remove unwanted woody parts, and finally its quality is verified by laboratory testing.

The result is a wholesome, delicious flour. A method refined over decades makes it possible to create unique products for different uses. Mulino Angelica has struck a fine balance between traditional craftsmanship and new innovation.
