These delicious, crunchy taralli come from the heel of Italy's boot, the region of Puglia. Taralli are served with the aperitivo, before the antipasti proper. Traditional taralli contain the three basic ingredients of the region's countryside – wheat, wine and olive oil – plus a little salt. The flours used can range from white to wholegrain. Taralli may also be flavored with herbs or, for example, fennel seeds – or, as here, rosemary.
